Winter Warmer Recipe

Keep warm this winter with our healthy Tomato and Bean Broth soup recipe. 

The University of Derby’s multi award-winning chef lecturer Robert Stordy, who teaches the Hospitality and Catering Students who work in the Dome’s Restaurant how to do their thing, has provided us with a tasty recipe for a hearty winter soup. Easy and inexpensive to make, there’s no reason why you can’t experience first class cuisine at home!

Ingredients: (serves 2) 

30ml corn, sunflower or olive oil

1 medium onion, chopped finely

2 cloves garlic, crushed

1-2 chillies, de-seeded and chopped or a few good shots Tabasco sauce

1 red or green pepper, de-seeded and diced

½ tsp ground cumin

1 x 300ml tinned tomatoes, liquidised, strained to remove seeds

50g tomato puree

250ml vegetable stock

1 tin beans, mixed, cannellini, or haricot etc

1 tsp dried or fresh oregano

Pinch sugar

Method: Heat the oil in a saucepan; add the onions, garlic, chillies, pepper and sauté for about 5 minutes.

Add the cumin, stock, tomatoes, tomato puree, beans, oregano and sugar. Bring to the boil and simmer for 10 minutes.

Check seasoning. Top with freshly chopped coriander (optional) and serve with warm, crusty bread.
