Brian Turner – the legend of Yorkshire
Crab Lasagne from The Square. Easily the best dish I have ever tasted.
What is your comfort food?
Rabbit Pie – for the childhood memories
What is your favourite tipple and why?
Beer. Hard to avoid when you live in Sheffield, the real ale capital of the UK, particularly anything from Magic Rock, Saltaire, Pictish.
Why did you get into catering?
I worked part time as a waiter in a restaurant whilst at school and the chefs seemed to always be having fun so I decided to switch sides!
Why is it a good career to get into?
You get to meet new people, be creative with new dishes and menus, see the world if you like, and every day is different.
Best career moment?
My first graduation at the University; seeing the progress students had made over three years was very inspiring.
Served anyone famous?
London was a hot bed of celebrities which was really fun, for me it had to be Pete Townshend of the Who and Richard Ashcroft of the Verve who were local, and regulars.
Spring, as most chefs would agree. Finally we get rid of the miserable British Autumn//Winter and greens start to appear.
